This, as my other post about government, is a general outline about economy in Colovia as a whole, and I hope you can contribute to expand or omit.
Agriculture is not as extended as livestock keeping. The main animal used is the sheep, which aside from the mutton (a staple amongst the Colovians who can afford it regularly), it gives wool.
The raw wool is exported either to the Nibenay to be treated and dyed by the extensive textile industry there, but due to cost of transportation , and to the fact that Nibeneans prefer silk, It is mostly exported through Anvil principally to Wayrest and some other coastal city states of Greater Bretony, where there is higher demand for such a product. Colovian wool garments are also created in Kvatch but are poor quality, not profitable for export.
Regarding agriculture, there is mainly horticulture (carrots, potatoes, onions, et cetera) in small, peasant-owned plots, though there are also a few lords in the Highlands that lease their land.
On a similar scale in parts of the Norther Gold Coast and the Highlands there are olive tree plantations. The olive oil produced here is prized in High Rock and even Summerset (Hammerfell also has extensive olive oil production), and is next to wool and wine one of the chief exports of Colovia, and keeps Anvil Thriving as the center of trade in the Western Empire.
The West Weald is the only known place in Tamriel to produce wine, and therefore wine, along with its byproduct, the famous Colovian brandy, is exported to every corner of the Empire, as far as Morrowind. A large percentage of population in this region works in the industry.
In Anvil, the main economic activity is commerce, as it is the most important trade port in Western Tamriel. The city attracts a large amount of people seeking to either join the Imperial Navy, which has its Headquarters here, or to work as crewmen on the countless merchant vessels that pass through here.
